Zirmertorte (Zirmer Tart)

My own recipe


8 egg whites | 180 g hazelnuts | 180 g sugar | 40 g dark chocolate | a pinch of cinnamon | a pinch of ground cloves | 1/2 lemon peel, grated | Butter for the tin | 3 tbsp. rum or Kirsch | 3 tbsp. cherry jam | 500 g cherries or sour cherries, cooked | 1/2 l cream | 30 g chocolate


Beat the egg white to a stiff foam. Stir in the grated hazelnuts, sugar, grated chocolate, cinnamon, ground cloves and lemon peel. Fill a well-greased baking tray and bake at about 180° C for 30 minutes. When the tart has cooled, pour the rum or Kirsch over it, cover with cherry jam and decorate with the halved and stoned cherries.

Beat the cream until it is stiff, cover the tart with it and sprinkle with the chocolate shards.
