Südtiroler Kaiserschmarrn (South Tyrolean Pancakes)

My own recipe


5 eggs, separated | 50 g sugar | 250 g flour | 3/8 l cream | a pinch of salt | Sultanas and pine nuts according to taste | Shortening | Sugar or icing sugar for dusting


Beat the egg yolk and sugar until frothy. Gradually stir in the sieved flour, milk, salt, sultanas and pine nuts. Finally, fold in the stiffly beaten egg whites.

Pour the mixture into a pan with plenty of hot oil until about 1 cm high, fry until golden-brown on both sides and shred into small pieces using two forks.?Dust with sugar or icing sugar.

My Tip
This is excellent with cranberry and pear compote or Zwetschgenröster (plum compote).
