An aroma of quince

After the harvest, the grapes are taken from the exclusive location in Montan to Neumarkt for pressing in the cellars. After gentle pressing, the must is fermented in steel tanks using natural yeast and finally matured in large, used acacia barrels with extended contact with the yeast. The history of PINUS is young. It was only in 2001 that the Zirmerhof Vineyard – member of the Freie Weinbauern Südtirols (Free Winegrowers of South Tyrol) – decided to produce its own wine. This was a logical development as the idea of self-sufficiency plays an important role at the Zirmerhof. Skilled cellar masters create a unique single-site wine from sweet grapes.
